Ingredients

  • 1 Uncle Ben’s minute rice, brown rice
  • 16 oz cooked chicken breast, diced
  • 2 egg whites
  • 1 large egg
  • 1/2 onion, diced
  • 1/2 cup frozen peas and carrots
  • 1 tbsp minced garlic
  • 2 tbsp soy sauce, or more to taste

Directions

Sautee onion on pan over medium heat. Once soft, add frozen peas and carrots and allow them to cook for about 5 minutes covered. Add rice, then crack in your egg and egg whites to cook covered for 2-3 mins. Remove lid and fluff rice. Toss in chicken. Add in soy sauce to taste. That’s it!
