
Another super simple breakfast recipe that took me 5 minutes to prep and lasted me all week! You can’t beat that. Feel free to incorporate different veggies that you enjoy but keep in mind that it will alter the carb content slightly. You can also use a different meat option, making this dish extremely versatile. Happy flexible dieting!
Ingredients
- Package of Hormel Canadian bacon (9 slices), diced
- 6 eggs
- 12 egg whites
- 1 cup raw spinach
- 100g onion, diced
- 100g red pepper, diced
- Salt & pepper to taste
Directions
Preheat oven to 350 degrees. Add eggs & egg whites to 9×9 casserole dish with salt and pepper and whisk. Add in remaining ingredients and whisk until sufficiently mixed. Bake for 45 minutes or until eggs are cooked through. Enjoy!
